Tastey Tuesday Recipe: Peanut Butter Cup Cookies


This week I am doing a dessert recipe as my blog post because we are fastly approaching the holiday season and these scrumptious cookies are great for class/work parties, gifts and just to have around the house for personal enjoyment! I love these cookies because they are so easy to make and they combine just the right amount of sweet & salty! I promise once you make these once you will be asked for the recipe because they are a hit with everyone :) This makes 40 cookies so you have more than enough to share with family and friends.
 
Ingredients
 
1 3/4 cup of flour
1/2 tsp of salt
1 tsp of baking soda
1/2 cup of butter (softened)
1/2 cup of white sugar
1/2 cup of creamy peanut butter
1/2 cup of packed brown sugar
1 egg (beaten)
1 tsp of vanilla extract
1 tbs of milk
40 Reece's Peanut Butter Cups
40 mini cupcake liners
 
 

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Sift together the flour, salt and baking soda; set aside.
  2. Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well. Shape into 40 balls and place each into a lined mini muffin pan.
  3. Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Hint/Tip: I have also used Hershey kisses instead of Reece's cups with this recipe and they are just as good! You can get creative with it and make it your own!
